Warming Sausage Casserole.

Vegan sausages, carrots and red cabbage in a thick, tomatoey gravy...Bonfire night. Burn's night. Pre-Christmas dinner parties. Halloween hosting. Quiet weekend in. Busy week ahead. A good sausage casserole is perfect for any occasion. You can batch cook it and it stores well, or keep it in the oven dish and easy dinner-party serving!

Other ingredients that also work well - Red lentils, mushrooms, leeks, celery, shallots. Serve with rice, mash potato, rustic bread or just enjoy on its own!

Top tip! The sausages shouldn't be frozen, but its ok if they're just chilled. I used frozen Linda Mccartney sausages, microwaved them for two minutes and then chopped them into chunks before putting them into my casserole.#simples

The below recipe serves two to three people.

You will need:

- Two vegan sausages, sliced

- Two onions, diced

- 4 cloves of garlic, crushed

- Red cabbage, chopped

- 2 carrots, sliced

- Tin of tomatoes

- Some gravy granules

- 2 tsp smoked paprika

- 3 tsp oregano

Recipe:

1. In a big pan brown the onions and garlic in some oil. Then add the carrots, cabbage, and paprika. Allow these to cook for a few minutes.

2. Next, throw in the chopped tomatoes, and a glug (50 to 100 ml?) and the gravy granules. Stir this in well, followed by the oregano.

3. Finally add the sausages and transfer this into your casserole dish, no need to cover! Add a little water if it already looking thick. Pop it in the oven at 180 for 20 minutes and serve!
