Superfood courgette bolognese.
This summery, flavour packed dish will leave your friends nourished, satisfied and impressed. Made from simple, but fresh ingredients this healthy, veggie-bolognese will become a new home staple for sure!
To save money, I just have it on cheap fusilli pasta, but wholemeal or tricolour would be my ideal preference. The courgette, tomatoes, chives and basil were all homegrown which makes me love this dish even more!
The following recipe serves two generously.
You will need:
- Pasta of choice (75g dry pasta per person)
- 1 tin of tomatoes
- 1 large courgette, sliced
- 1 onion, diced
- 3 cloves of garlic, crushed
- Handful of cherry tomatoes, halved
- Some broccoli
- Fresh chives
- Fresh basil
- Oregano
- Pinch of hot chilli powder
- Garlic salt
*Top tip, weigh out 75 g dry pasta per person*
Recipe:
- Start boiling the pasta
- In another pan, lightly fry the onion and garlic in the oregano, garlic salt and chilli until starting to brown
- Throw the courgette in with the onion and garlic and coat in all them spicy juices, let cook for a few minutes
- Add the tinned tomatoes into the pan reduce it down on a medium heat
- When the pasta has a few minutes left, throw the broccoli into the pasta water
- At the last minute, add the cherry tomatoes into the courgette pan and allow them to get hot, they will release their lovely taste into your space, creating a richer flavour!
- Drain the pasta and broccoli and chop up a few fresh chives to mix in
- Finally, chop up some fresh basil and sprinkle and stir this into your courgette sauce for a lovely aromatic flavour
- Dish up the pasta and scoop on some of that sweet-rich-garlic sauce et bon appetit!
