Delicious black bean salsa.

Fresh, hearty, healthy, filling, nutritious, delicious, the list goes on! I LOVE this black bean salsa! It's great for a desk-lunch, perfect for summer BBQs and is super easy and cheap to make.

There's loads of recipes online but here's how I did mine...

You will need:

- One can of black beans, drained and rinsed

- One can of kidney beans in a chilli sauce

- 1 red onion, finely chopped

- 2-3 fresh tomatoes, chopped

- A handful of jalapeños

- 1 Sweet bell pepper, finely chopped

- A squeeze of fresh lime juice

- A couple tbsp of olive oil

- Plus1tsp of cumin, salt and pepper

To make:

Simply mix all the ingredients into a bowl and enjoy! Easy.

Great with tortillas, or with my courgette and sweetcorn cakes! The perfect addition to any Mexican night!
