Sweet Potato Bhaji
Kind of like hash browns, fritters, pakoras or burgers, who really knows? All I know is I expected these to be an absolute FLOP when my friend suggested them to me. However they came out super tasty! (I'm not blowing my own trumpet as Andrew made them). I genuinely would have been happy to have them served to me in a restaurant, they were DELICIOUS. Anyway...Enough chit chat. Here's the recipe:
(Makes 5 large burger sized fritters)
You will need:
- 1 large sweet potato, peeled and grated/shredded
- 1 onion, diced
- 32 g flour, sieved
- 2 tbsp vegetable oil
- 2 tbsp salt, pepper, garlic powder, cumin
- 1 tbsp tumeric
All the ingredients in a big bowl. Annnnd smush. Done.
Recipe:
- Rinse the sweet potato and squeeze to remove excess water. Put them in a large bowl.
- Add the onion, flour, oil and spices and mix it up well. Get in there with your hands if you have to.
- Shape your patties, making them into balls works well. Then pat them into shape before you cook them.
- Add some more oil to your frying pan or skillet, heat on high.
- When the oil is hot, cook the patties for 3 minutes both sides. Turn the heat down to medium-hot. You're going for a nice crunchy golden colour, so judge it as you go.
- Allow the patties to cool a little on a paper towel before serving. It helps them set into shape.
